Kale Tacos

Ingredients:
- 2 Cloves Garlic, minced
- ½ Red Onion, Thinly Sliced
- 1 T Extra Virgin Olive Oil
- 1 ½ c Cabbage Thinly Sliced
- ½ c Button Mushrooms Diced
- ¼ t salt
- Fresh ground pepper
- 6 oz. Kale Cleaned and Stems Removed
- 1 Large, Ripe Tomato, Diced
- 2 T Cilantro Diced
- ½ C Sour Cream
- Lime Juice
- 4 Soft Tortillas (using corn tortillas will yield a gluten free dish) 

Instructions:

  1. In a large skillet, sauté olive oil, garlic, onion until it sweats.
  2. Lower heat, add mushrooms for ~1 minute, then add salt, pepper, and cabbage for 2-3 minutes until it softens.
  3. Add kale until it wilts.
  4. Combine cilantro, sour cream, and add lime juice to taste.
  5. Assemble tacos in shell: cilantro cream on the bottom and top with kale & vegetable mixture.
  6. Enjoy!
